30 Minute Meal: Chile Verde with Rice

This recipe is great for a 30 minute meal! I’m cheating and using Trader Joes yummy verde salsa to save some time during midterms, but keep a look out for my homemade Chile verde sauce recipe next week!

2 LBS of Cubed Pork

1 jar of Trader Joes Salsa Verde Sauce

Ground Black Pepper (to taste)

3 Bay Leafs

2 Dried Long Red Chile

1 TBS Dried Chile Flakes

Cut cubed pork into small bite size pieces. I normally just cut my cubes into fours. Season with pepper and dried Chile flakes.

In a deep pan, add bay leafs and dried long red chiles and cook meat in own fat until it is fully cooked on medium heat. I make my cubes a bit more crispy since the sauce will soften up the meat.

Remove from heat for about 2-3 minutes. After, pour in the full jar of the Trader Joes salsa verde sauce. After, fill the jar the sauce came in about ⅓ of the way and put heat on medium low until it simmers.

Once sauce thickens to desired thickness, remove from heat and serve on a bead of rice!

How to Make the White

I love love love to use my rice cooker to make white rice. It’s great to not have to watch the rice as you make the Chile verde! Once again, this is the quick version of making a delicious meal. I will post next week how to make the perfect white rice on the stove top!

1 Cups of Basmati White Rice

2 Cups of Water

2 TBS Olive Oil

Pinch of salt

Rice cooker

Add rice, water, salt, and olive oil to rice cooker. Stir it 2-3 times. After, plug un rice cooker, put top on, and put the switch down on the words cook. It will cook itself and switch to warm. Unplug cooker and serve!
